A vegetarian and reduced calorie version of the original beef and broccoli

Recipe Ingredients for Vegetarian "Beef" and broccoli stir fry

2 tbsp soy sauce
1 tbsp corn starch
1 tbsp rice wine vinegar
1 tbsp minced fresh ginger
1 tsp minced garlic
8 oz morningstar farms steak strips
1 bunch broccoli
2 carrots
1 green bell pepper
3/4 cup vegetable broth
2 tsp sesame seed oil

Recipe Directions for Vegetarian "Beef" and broccoli stir fry

In a small bowl, combine soy sauce, cornstarch, vinegar, ginger, and garlic. Whisk until combined. Add the morningstar farms beef strips and let stand for 10 to 20 minutes. Cut the broccoli florets from the stem and discard stems. Cut the carrots into small slices. Chop the bell pepper. Add 1 tsp of the oil to a wok. Once hot, add the beef mixture and stir fry for 1 minute. Remove from the pan and set aside. Add the second tsp of oil to the skillet and add the vegetables for 1 minute. Add the broth and cook until the vegetables are tender. Return the beef to the wok and cook until hot. This is great served with some brown rice.
