Easy vegetarian enchilada recipe. Take cheese out and it is vegan!

Recipe Ingredients for Vegetarian Bean Enchilada

1/4 cup Old El Paso Sauce Enchilada Mild
8 oz Cheddar Cheese
0.67 cup Whole Grain Brown Rice
15 oz Fat Free Refried Beans
15 oz Black Beans
10 oz Original Diced Tomatoes and Green Chilies
22 tortillas 6" Yellow Corn Tortillas 24ct

Recipe Directions for Vegetarian Bean Enchilada

  1. Cook 2/3 cup rice

  2. pre heat oven to 350 and heat medium sized skillet over medium heat.

  3. rinse and drain black beans and combine with rice and refried beans. Heat in microwave for 60 secs, stir, and heat again, repeating until mixture can be easily stirred.

  4. Coat bottom of two 9X13 dishes with half each of one can of enchilada sauce.

  5. When skillet is ready, heat tortillas briefly on each side until pliable. Fill with one tbsp of rice and bean mixture and add a pinch of cheese

  6. Place seam side down in dish. Should get 10-12 enchiladas per dish.

  7. Place in oven covered with aluminum foil for 20 minutes. Remove, uncover, top with 1/2 cup of cheese, and finish for 5 minutes. Cook one dish at a time.
