Recipe Ingredients for Vegetarian Barley Soup Low Calorie

1 Green pepper, chopped
1/2 cup chopped onion
1 clove garlic
2 tbls olive oil
12 oz water
52 oz Vegetable broth, (3 cans)
14 1/2 oz whole canned tomatoes
2 tsps salt
1/2 tsp basil
1/2 tsp oregano
1/8 tsp black pepper
1/2 cup barley
2 cups broccoli, chopped
3 medium carrots, cut julliene
1 cup celery, sliced

Recipe Directions for Vegetarian Barley Soup Low Calorie

  1. Saute green pepper onion and garlic in oil in a 4.5 qt Dutch Oven

  2. Add Water, tomatoes,sat, basil,oregano and pepper. Bring to a boil and stir in barley. Simmer for abtou 40 minutes.

  3. Add broccoli, carrots and celery. Return to boil and simmer for 20 minutes or until vegetables are tender.
