This is a high protein, low carb, vegetarian alternative to potato and bacon soup. Its very hearty and you will hardly notice that there are actually no potatoes at all in this soup as caulflower makes a pretty decent substitute here. The smokeiness of the gouda cheese lends a bacony flavor to the dish and makes it more rich while the amaranth flower stands in for plain white flower and adds some needed protein (other whole grain flours may be used but will likely produce varied results). Vegans could substitute a meltable vegan "sheese" or nutritional yeast instead of gouda and a drop or two of liquid smoke to add the smoky flavor.

Recipe Ingredients for Vegetarian alternative to potato and bacon soup

8 oz gouda cheese (smoked), shredded
1 onion, finely chopped
21 ounce vegetable broth
2 cups water
4 cups cauliflower, large choped
1/2 teaspoon garlic powder, your choice
1/2 teaspoon dried dill weed
1/2 teaspoon ground white pepper
1/2 cup amaranth flour
12 oz tofu, silken blended

Recipe Directions for Vegetarian alternative to potato and bacon soup

  1. Place onion in a large, deep skillet with non-stick spray. Cook over medium-high heat until onions are soft. Drain off excess juice.

  2. Transfer the onion to a slow cooker, and stir in broth, water, cauliflower, garlic powder, dill weed, and white pepper. Cover, and cook on Low 6 to 7 hours, stirring occasionally.

  3. In a small bowl, whisk together the flour and silken tofu. Stir into the soup along with the shredded smoked gouda. Cover, and cook another 30 minutes before serving until all cheese had melted.
