a great low cal starter or snack, this vegetable-rich miso soup recipe is simple to prepare, even when away at work, involves no cooking beyond boiling water (a kettle will do), and is delicious!

Recipe Ingredients for Vegetably miso soup

3 tsp Mellow Red Miso Soybean Paste
1/2 chicken stock cube
1 carrot
1/2 cup cabbage
1/2 cup leek
1 litre water

Recipe Directions for Vegetably miso soup

  1. Chop the vegetables into julienne or very thin strips

  2. Mix the miso paste with about 1/2 cup COLD water (hot water straight away messes with the flavour) in a large jug.

  3. Break up the stock cube into the miso paste. Mix as much as possible (it will dissolve the rest of the way when we add the hot water). Add the vegetables.

  4. Add 1 litre (or however much looks right) of boiling water. Stir for 1-2 minutes, until all the stock-cube is dissolved, but the veggies are still crunchy.

  5. Serve, and enjoy!

  6. You could also add sesame oil, tofu, smoked or flaked fish, seaweed, toasted sesame seeds or anything else.
