Recipe Ingredients for vegetables with tomatoes and beans

2 large white onions
8 whole canned tomatoes
8 oz Small Red Beans, Premium
14 oz asparagus
2 pepper red peppers
1 large carrot
4 oz baby bella mushrooms

Recipe Directions for vegetables with tomatoes and beans

I usually start by peeling and cutting the carrot into quarters lengthwise, then turning on the large skillet on high. When it's warm, I add the carrots, cut the onions and peppers and add them as they are cut, turning down the burner to med once the veg starts to sizzle alot. Once they are sweating and looking about 1/2 way done, I cut and add the asparagus, then cut the mushrooms and add those with the beans. Then I open the cans of tomatoes, crush them in my hands and add them as I am crushing them(should end up with some fairly decent size pieces), then add the salt, pepper, garlic, and sugar(still experimenting with the sugar amount). Let it warm all the way through. I serve it over brown rice for a complete, filling meal.
