Recipe Ingredients for VEGETABLES: Spinach Souffle

10 oz frozen spinach, cooked and chopped
3 egg whites
3 egg yolks
1/4 cup cream
1/2 tsp grated nutmeg
1/2 tsp salt
1 oz Romano cheese, grated (1/4 cup)
1 slice whole wheat bread, made into crumbs, mixed with:
1/2 tsp Italian seasoning

Recipe Directions for VEGETABLES: Spinach Souffle

  1. Lightly steam spinach, separate and squeeze dry. Let cool to room temperature. Preheat oven to 300 degrees.

  2. Beat egg whites until thick and foamy, but not as stiff as meringue. Beat together egg yolks, cream, nutmeg, salt, and cheese. Fold spinach into egg/cheese mixture, then fold beaten egg whites into spinach mixture. Pour mixture into greased round casserole; top with crumbs.

  3. Bake for 45 minutes or until knife inserted in center comes out clean. Serve immediately.
