This Asian-inspired dish is great as a vegetarian entree or add some cooked chicken breast for an even heartier meal.

Recipe Ingredients for Vegetables & Noodles with Lime Peanut Sauce

12 oz whole-wheat spaghetti or linguine, dry
258 g broccoli florets, about 2 cups or 9 ounces
186 g snow peas, about 2 cups or 6 ounces 155 g sugar snap peas, about 2 cups or 6 ounces
128 g natural creamy peanut butter, or 1/2c
1/4 c low-sodium soy sauce
1/4 c water
2 T rice vinegar
2 T fresh lime juice
1 medium scallion, cut into pieces
6 g fresh ginger root, about 3/4 in grated
9 g brown sugar, 1 T
1/4 tsp crushed red pepper
72 g unsalted peanuts, about 1/2 c [20395}

Recipe Directions for Vegetables & Noodles with Lime Peanut Sauce

  1. Cook the pasta in a large pot of water according to the package directions.

  2. While the pasta is cooking, steam the broccoli over a pot of boiling water for about 3 minutes. Add the snow peas and sugar snap peas and steam all for about 2 minutes more. These can also be done in the microwave.

  3. Make the sauce by pureeing the peanut butter, soy sauce, water, vinegar, lme juice, scallion, ginger, sugar and red pepper in a blender or food processor until smooth.

  4. Toast the peanuts in a dry pan over medium heat until they become fragrant, botu 3 minutes. Set them aside to cool.

  5. Right before serving, toss the pasta with 3/4 cup of the peanut sauce. Divide into 6 serving bowls and top each serving with 1/6 of the vegetables. Drizzle the remaining sauce over the vegetables.

  6. Coarsely shop the peanuts and sprinkle 12g per serving over each bowl. Serve.
