Recipe Ingredients for Vegetable Zucchini Soup

1 tbsp olive oil
1 medium onion, chopped
3 medium zucchini, chopped
10 ounces carrots, shredded
29 ounce diced tomatos
30 ounces low sodium vegetable broth
1 cup water

Recipe Directions for Vegetable Zucchini Soup

  1. Heat olive oil in Dutch oven

  2. Add onion and saute about 3 minutes

  3. Add carrots and continue to saute another 3 minutes

  4. Stir in tomatoes, zucchini, broth, and water

  5. Simmer uncovered about 30 minutes

  6. Top with grated cheese if desired
