Vegetable Soup with tortellini noodles

Recipe Ingredients for Vegetable Tortellini Soup

19 oz Three Cheese Tortellini
2 1tsp Olive Oil
2 stalks Celery
3 cloves, raw Garlic
1 cup slices Squash, Summer, Zucchini, Includes Skin
1 small Onions
28 oz Vegetable Broth
2 carrot Carrots
1 cup Peas, Green
2 tbsp Parmesan, Grated Cheese

Recipe Directions for Vegetable Tortellini Soup

  1. Heat oil in large saucepan.

  2. Add onion and celery. Cook 3 minutes. Stir in chopped garlic cloves.

  3. Add veggy broth, water, chopped carrots, chopped zucchinni, and peas.

  4. Return to boil, then turn on low and let simmer for 15 minutes.

  5. Add pasta, bring to boil, and cook for 7 minutes.

  6. Serve in bowls and top with cheese.
