Recipe Ingredients for Vegetable topping for quinoa or pasta

2 sprays Pam
15 ounces canned tomatoes
2 red bell peppers, sliced
1 green bell pepper, sliced
1 red onion, slice
4 cloves garlic, crushed
1 zucchini, sliced

Recipe Directions for Vegetable topping for quinoa or pasta

  1. Spray sautee pan with Pam

  2. lightly sautee the onions, bell peppers, and garlic

  3. Add canned tomatoes and bring to a simmer

  4. Add zuchinni, and simmer for 2-3 minutes.

  5. Serve over quinoa, pasta or rice
