This is my own stir fry recipe using tofu.

Recipe Ingredients for Vegetable Tofu Stir Fry

6 oz Extra Firm Tofu
8 pieces raw Organic Cremini Mushrooms Packaged
0.5 cup, chopped Carrots
0.5 cup, diced Celery
2 medium (4-1/8" long) Onions, Spring Or Scallions
1 cup, chopped Squash, Summer, Zucchini, Includes Skin
0.5 cup Water Chestnuts (Sliced)
1 cup Baby Corn - (Whole
0.5 cup, chopped Peppers, Sweet, Red
2 tsp Ginger Root
1 tsp Turmeric, Ground
0.5 tbsp Sage, Ground
1 cup Organic Vegetable Broth
1.5 tbsp Corn Starch
2 tbsp Soy Sauce
2 1tsp Olive Oil

Recipe Directions for Vegetable Tofu Stir Fry

  1. Pat the tofu dry and cut into small bite size pieces, dry again. Marinate the tofu in 1/3 of the ginger, turmeric and sage for at least 30 minutes. Roll tofu bites in the sesame seeds and then saute until lightly browned in 1 tsp of olive oil. Remove the tofu from the pan. Add the additional tsp of oil and saute all of the vegetable for about 5 minutes. Add the remainder of the ginger, turmeric and sage to the vegetable about half way through their cooking process.

  2. Mix together the corn starch, soy sauce and vegetable broth until the corn starch is well blended.

  3. Add the tofu to the vegetables and then stir in the corn starch mixture, cook just until heated through. Serve over rice if desired.
