Asian influenced soup with vegetables and tofu.

Recipe Ingredients for Vegetable Tofu Soup

14 ounces whole wheat spaghetti
3 cups, mushrooms, sliced
4 scallions, chopped
1 cup asparagus, chopped
6 cups chicken broth
7 tbsp sesame oil
4 tbsp soy sauce, light
1/2 onion, chopped
1 red bell pepper, chopped
1/2 cup parsley, chopped
1 leek, chopped
1 block tofu, lite

Recipe Directions for Vegetable Tofu Soup

  1. Fill pot with water, adding extra than needed. Boil water and cook spaghetti per package directions.

  2. When there are about 4 minutes left, add in cut vegetables.

  3. Once spaghetti is finished, strain spaghetti and vegetables.

  4. Combine broth, parsley, soy sauce, sesame oil, and tofu. Bring mixture to a simmer.

  5. Once simmering, add in spaghetti and vegetables, heat all thoroughly, and serve.
