Vegetarian thai green curry with eggplant, green pepper, basil, and coconut milk

1 tablespoon Oil, canola
285 mL Maeil Fresh Energy Low Fat Milk (Korea)
3 tbsp Coconut Milk
1 serving Asian Home Gourmet Green Thai Curry Paste (1 packet)
0.5 cup leaves, whole Basil, Fresh
2 small Peppers, Sweet, Green

Recipe Directions for Vegetable Thai Green Curryy

Heat oil in pan on medium-low heat, add curry spice and stirfry for one minute. Add milk and coconut milk and cook until oil appears on the top. Add eggplant and green peppers. Bring to boil. Garnish with basil leaves
