300 g eggplant
133 g courgette
73 g red onion
265 ml coconut milk
2 teaspoon green curry paste
0.67 teaspoon oil
2 teaspoon soy sauce
0.67 teaspoon sugar
50 g rice

Recipe Directions for Vegetable Thai Curry with Rice

  1. heat oil in pan

  2. add curry paste, stir for one minute

  3. mix in coconut milk and bring to boil

  4. add eggplant and red onion

  5. simmer for 10 minutes

  6. stir in sugar and soy sauce, followed by courgette

  7. cook until sauce is thick and vegetables are cooked

  8. serve with the rice
