Vegetable and cheese tart. You can use any vegetable you like and your favorite combination of cheeses. It works great with feta cheese, parmesan and cheddar or parmesan and gouda.

Recipe Ingredients for Vegetable Tart

1 serving Hartige Taart
1 serving Twijfelaar cheese (cow, goat, sheep)
100 grams Gouda Cheese
1 large Egg, Whole
50 grams Halfvolle Milk w extra Calcium
1 medium raw Leeks
3 small (3" long) Onions, Spring Or Scallions
250 grams Mushrooms
200 grams Eggplant
150 grams Broccoli

Recipe Directions for Vegetable Tart

  1. Prepare the vegetables. Cut them in pieces to your liking and set aside.

  2. Place the eggplant in a colander and sprinkle with salt. Let it sit for a good 15'-20', until all its bitter juices come out.

  3. Place the brocolli in a pan with water and let it simmer in medium-low heat until almost tender.

  4. In a big pan, saute the onions and leek in the olive oil until soft.

  5. Add the mushrooms and stir for 2'-3'.

  6. Rinse the eggplant in cold water, dry it with a paper towel and throw in the pan.

  7. Add salt and pepper.

  8. Stir for 2'-3' and let the vegetables blend in low heat for another 3'.

  9. Turn off the heat.

  10. Cut the brocolli in smal stalks and add to the pan.

  11. In a small bowl, combine the egg and the milk and add to the pan while stirring.

  12. Grate the cheese, save half a cup and add the rest to the mixture. Stir well.

  13. Taste for salt and pepper.

  14. Preheat oven to 180C.

  15. Slightly oil a tart dish or a baking tray and place the base for the tart (ready or homemade).

  16. Throw in the mixture and even it on the dish.

  17. Sprinkle with the remaining cheese and bake for 20'-30' according to your liking or until the edges of the tart are golden brown.
