Healthy winter tagine, Chili powder should read Mild but analyser didn't find it. Obviously it makes sense to use as little or as much Chili as you prefer

Recipe Ingredients for Vegetable Tagine

278 grams carrot
158 grams parsnip
251 grams onion
202 grams red pepper
2 tablespoons Olive Oil
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon cinnamon
1 teaspoon chilli powder
400 grams canned tomatoes
2 tablespoons honey
1 salt and pepper
130 grams dried apricots

Recipe Directions for Vegetable Tagine

  1. Heat oven to 200c/fan 180c/Gas 6

  2. Chop all the vegetables to roughly the same size and pop into a plastic bag with a tablespoon of the olive oil some salt and pepper. Give them a good shake to coat with oil and seasoning. Tip onto a baking tray and bake until beginning to brown and are tender approx 30 minutes.

  3. Fry the spices in the remaining oil for one minute, they should sizzle and smell aromatic

  4. Tip in the tomatoes, apricots and honey and a can of water.

  5. Simmer or five minutes until the sauce is reduced slightly, and then add the roasted vegetables. Cook until the vegetables are cooked to your preference.

  6. Serve with Cous Cous, Boiled Rice or a Jacket Potato.
