Loads of vegetables in a tomato broth with a sweetness from the prunes. Best served with brown rice.

Recipe Ingredients for Vegetable tagine

2 tbsp olive oil
30 ml lemon juice
1 tbsp tomato puree
2 tsp paprika
2 tsp cumin
600 g plum tomatoes
2 red peppers
75 g almonds
100 g prunes
10 g ginger
3 cloves garlic
400 g chickpeas
2 courgette
2 Peppers, Hot Chili, Red
20 g coriander
2 carrots

Recipe Directions for Vegetable tagine

  1. Heat the spices, chili and garlic in a large pan

  2. Add the carrots and cook for 10 min

  3. Add the tomatoes, red peppers and cook for another 15-20 min (lid on)

  4. Add the almonds, ginger and prunes cook for 10 min

  5. Add the courgettes and chickpeas cook for 10 min

  6. Add the coriander
