Vegetable Sushi (you can add protein as you go if you put fish or something in each roll)

Recipe Ingredients for Vegetable Sushi

1 cup dry Sticky Rice Medium Grain
3/4 cup Rice Wine Vinegar
9 tsp Sugars, Granulated
5 sheet Nori, 10 Sheets
1 medium Carrots
1 medium Cucumber, Peeled
2 medium (4-1/8" long) Onions, Spring Or Scallions
1/4 medium Yellow Hothouse Bell Pepper
1 tsp sesame oil
2 tsp rice wine vinegar
3 tbs soy sauce
1 tsp mirin
1 tsp Wasabi
1/2 cup pickled ginger

Recipe Directions for Vegetable Sushi

  1. Rinse the rice in water until water runs clear

  2. Soak rinsed rice in water for an hour

  3. Put soaked rice in rice cooker with about one inch more water than rice. Cook.

  4. Combine vinegar and sugar in a saucepan. Heat over medium heat until sugar dissolves.

  5. Combine remaining rice wine vinegar, sesame oil, soy sauce and mirin. This is your dipping sauce. Add as much wassabi as you would like.

  6. Chop vegetables into long strips.

  7. When rice is done cooking, pour vinegar-sugar-salt mixture over it.

  8. Lay nori on sushi mat. Spread rice evenly over nori.

  9. Lay vegetable strips over rice about 1/3 way up the nori.

  10. Roll tightly.

  11. Slice.

  12. Arrange rolls, dipping sauce and pickled ginger on a plate.

  13. Sushi!
