Recipe Ingredients for vegetable stuffed mushroom caps

180 g red bell peppers
344 g eggplant
180 g onion
1 tbsp Olive Oil
450 g portabella mushrooms
46 g whole wheat bread
22 g panko bread crumbs
1/3 c pizza sauce
10 g parmesan cheese
5 g chicken soup powder
1/2 c water
1/2 tsp nutmeg
1/2 tsp garlic powder
3 g splenda (3 packets)

Recipe Directions for vegetable stuffed mushroom caps

  1. saute peppers eggplant onion in oil for about 7 minutes until onions start to brown.

  2. Add soup powder to water and add to vegetables

  3. simmer for about 15 minutes to tenderize

  4. mix breadcrumbs & cheese in a separate bowl

  5. place cooked veggies in food processor until fine.

  6. fill mushroom caps

  7. Top with scant 2 tbsp pizza sauce each

  8. top with crumb mixture

  9. Bake at 400 degrees for about 10-15 minutes.
