Revised chicken breast stuffed with mixed vegetable over brown rice

Recipe Ingredients for Vegetable stuffed Chicken over Rice

12 oz Fresh Boneless Skinless Chicken Breasts
1.25 cup Vegetables, Mixed
2 serving chicken soup
0.25 Teaspoon Thyme
2 dash Pepper, Black
1 cup Rice, Brown, Medium-grain, Cooked
0.17 cup Whole Wheat Flour
0.5 cup Milk, Reduced Fat, Fluid, 2% Milkfat

Recipe Directions for Vegetable stuffed Chicken over Rice

  1. Place chicken breast between 2 pieces of paper. Pound gently until about 1/4 inch thick

  2. Chop thawed vegetable and reserve half for sauce Spoon veggies into the center of each chicken breast and roll up like a jelly roll

  3. Heat chicken broth, thyme, pepper. add chicken rolls, seam down. bring to a boil, reduce heat, cover and simmer 20 minutes. Using a slotted spoon remove chicken and serve over cooked rice.

  4. add reserve veggies to mixture in the skillet. bring to a boil and reduce heat and simmer for 5 min.

  5. combine flour and milk, blend well

  6. and add to mixture in skillet. Cook until thickened.

  7. Spoon over rice and chicken
