Recipe Ingredients for Vegetable Stracciatella

4 cube Bouillon Cubes
10 cups water
4 cloves, raw Garlic
1 medium Carrots, Baby
1 stalk, large (11"-12" long) Celery
8 cup, chopped Kale
3 tbsp Parsley
2 tbsp Parmesan, Grated Cheese
2 large Egg, Whole
1 dash Pepper, Black

Recipe Directions for Vegetable Stracciatella

  1. INGREDIENTS

  2. 10 cups chicken stock or canned low-sodium broth

  3. 4 garlic cloves, thinly sliced

  4. 1 small carrot, finely shredded

  5. 1 celery rib, cut into matchsticks

  6. 8 cups chopped kale or spinach

  7. 3 tablespoons minced parsley

  8. 2 tablespoons grated Parmesan cheese, plus more for serving

  9. 2 large eggs, beaten

  10. Salt and freshly ground pepper

  11. In a saucepan, combine the stock and garlic and bring to a boil. Add the carrot and celery, cover and cook over moderately high heat until the celery is crisp-tender, about 4 minutes. Add the spinach, parsley and 2 tablespoons of Parmesan and simmer for 2 minutes.

  12. Beat the eggs in a bowl and pour them into the soup. Cook over moderately low heat for 30 seconds, gently stirring with a fork until threads appear. Season with salt and pepper. Ladle the soup into bowls; serve with Parmesan cheese.
