Vegetable Stock Made in Pressure Cooker

Recipe Ingredients for Vegetable Stock

6 cups water
3 large carrots
3 celery stalks
2 medium onions
1 cup cauliflower
3 cups winter squash
1 cup mushrooms
2 tbsp tomato paste

Recipe Directions for Vegetable Stock

  1. Pour water into pressure cooker

  2. Add roughly chopped vegetables to pressure cooker

  3. Clamp on top, bring to high pressure for 10 minutes

  4. Turn off heat and allow pressure to release using slow method

  5. When pressure released open cooker and strain vegetables for liquid, discard vegeatbles, save stock for use in soups and sauces
