Recipe Ingredients for Vegetable Stir Fry

350 g extra firm tofu
35 g rice noodles (1/2 package)
2 cups cauliflower, chopped
1 cup carrots, sliced
1 cup sweet red peppers, sliced
1 cup mushrooms, sliced
2 leeks, sliced
1 tomato, chopped
2 T Olive Oil

Recipe Directions for Vegetable Stir Fry

  1. Drain and prepare tofu by removing excess moisture. This may take up to an hour.

  2. Place rice noodles in a shallow pan and cover them with hot/boiling water. (Don't place over heat.) Leave them to soak in hot water while you make the rest of the stir fry, then just drain and rinse before adding them to the mixture.

  3. If you like vegetables very tender, you can lightly steam the cauliflower and carrots (for about half the time you would normally) before stir frying. If you prefer them to be crisp tender, skip this step.

  4. Heat wok or large skillet over high heat and add 1 T Olive oil. Once oil is hot add tofu and stir fry until golden brown. Remove tofu from pan and set aside. Add remaining 1 T of olive oil to wok or skillet and when hot, add cauliflower, carrots, peppers, mushrooms, and leeks. Stir fry until vegetables reach desired tenderness. Add tomato, rice noodles, and tofu. Add your favorite stir fry sauce/glaze or low sodium soy sauce and toss to coat.
