Recipe Ingredients for Vegetable Stir-Fry

1 cups brown rice
1 tbsp olive oil
1 yellow bell pepper, diced
1/2 onion, diced
2 tbsp ginger, grated
1 cup frozen peas
1/4 cup soy sauce
2 tbsp honey
1 cup fresh green beans
2 eggs
2 cloves garlic, minced

Recipe Directions for Vegetable Stir-Fry

Cook rice with 1 cup water - simmer on low for 45 minutes. Meanwhile, saute veggies in a pan with oil. Scramble in eggs. Add rice. Combine soy, honey, garlic and ginger for sauce and pour over rice mixture. Serve immediately.
