Delicious StirFry in which any vegetables can be used. For a well-rounded meal add 1 16-oz package of firm tofu (chopped into cubes)

Recipe Ingredients for Vegetable Stir-Fry

1 tsp olive oil
2 cloves garlic
1 tbs fresh ginger, chopped
2 tbs soy sauce
1 medium carrot, peeled and sliced
1 green bell pepper, seeded and sliced
1 cup baby corn, drained and chopped
2 cups bok choy, chopped
2 cups mushrooms, chopped
1 1/4 cups bean sprouts
1 cup bamboo shoots, drained and chopped

Recipe Directions for Vegetable Stir-Fry

  1. In a large skillet, heat oil over medium-high heat. Stir in garlic and ginger, cook for 30 seconds. (If adding tofu, stir in tofu, and cook until golden brown.)

  2. Stir in carrots, bell pepper, and baby corn, cooking for 2 minutes. Stir in bok choy, mushrooms, bean sprouts, and bamboo, heat through. Stir in soy sauce, and serve hot.
