A vegetarian stew which may be thrown together from just about anything in your fridge.

Recipe Ingredients for Vegetable Stew

2 cups chickpeas, cooked
1 eggplant, cubed
1 purple onion, diced
1 red pepper, diced
1 cup cherry tomatoes
2 cups tomatoes, diced
2 medium potatoes, diced
2 cup asparagus
16 kalamata olives
3 cups green beans
3 tsp olive oil
1 Oregano to taste

Recipe Directions for Vegetable Stew

  1. Cook onions in olive oil for 10 minutes.

  2. Add 1 cup water, potatoes, and green beans. Cook for 10 minutes.

  3. Add eggplant, red peppers, cherry tomatoes, and asparagus. Cook for 10 minutes.

  4. Add diced tomatoes (canned works well), olives, oregano. Simmer until stew reaches desired thickness.

  5. Serve with rice or crusty bread.
