Delicious vegetable stew. Great served over a bed of brown rice.

Recipe Ingredients for Vegetable Stew

1 tbsp olive oil
2 onions, chopped
1 large red bell pepper
4 stalks celery
1 large eggplant
2 medium zucchini
4 cloves garlic
3 tomatoes
3 carrots
28 oz. can tomatoes
14 oz. baked beans, canned
1 salt and pepper
2 tsp. dried basil

Recipe Directions for Vegetable Stew

Sautee onions first. Then add the garlic, celery and bell pepper and cook, covered for 5 more minutes. Add the remaining ingredients and simmer on low for 30 minutes.
