Recipe Ingredients for Vegetable Stew

1 tbsp Becel Oil
1 medium raw Onion Red
2 cloves, raw Garlic
1 tbsp, ground Thyme, Dried
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 3/4 cup chicken broth
2 tbsp Parsley, Dried
1/4 cup, chopped Squash, Summer, Zucchini, Includes Skin

Recipe Directions for Vegetable Stew

  1. heat oil in large saucepan, add the onion, garlic, coriander and thyme and cook over medium heat, stirring frequently, for 5 mins.

  2. add peppers and zucchini and cook for 10 mins.

  3. stir in the tomatoes, stock, salt and pepper, and parsley. bring to a boil then reduce heat, cover and summer for 30 mins.

  4. serve hot.
