Recipe Ingredients for Vegetable Stew Provencale

2 tablespoons olive oil
1 garlic clove, minced
1 tablespoon tomato paste
2 small zucchini, cut into 1/2-inch cubes
1/2 pound tomatoes, cored and cut into 1/2-inch cubes
2 cups eggplant, cubed
1 cup mushrooms, trimmed and quartered
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup parsley, chopped
1/4 cup basil, chopped
1 teaspoon thyme
1/2 teaspoon rosemary

Recipe Directions for Vegetable Stew Provencale

  1. Heat olive oil in a large skillet. Add garlic and saute for 1 minutes. Stir in the tomato paste.

  2. Add zucchini, tomatoes, onion, pepper, eggplant, mushrooms, and stir to blend. Cover and cook over low heat, stirring occasionally, until the vegetables are tender but not mushy; about 15 minutes.

  3. Season the vegetable mixture with salt and pepper. Finely chop together the parsley, basil, thyme, and rosemary. Add to the vegetables. Cook over low heat, uncovered, until some of the juices evaporate, about 5 minutes. Taste and add additional herbs and/or seasonings. Serve warm or at room temperature.
