Recipe Ingredients for Vegetable Stew with Herb Dumplings

1 medium onion, chopped
3 cloves of garlic, minced
1 tablespoon olive oil
5 cups vegetable broth
1 teaspoon ground mustard
4 cups frozen mixed vegetables
15 oz stewed tomatoes
15 oz kidney beans
1 cup whole wheat flour
1 tbs baking powder
2/3 cup cornmeal
1 tsp salt
1/4 teaspoon oregano
1/4 teaspoon basil
1/4 teaspoon rosemary
1 egg
1/2 cup unsweetened soymilk
2 tbs olive oil

Recipe Directions for Vegetable Stew with Herb Dumplings

  1. 1. Cook onion in oil over medium heat, stirring occasionally, till tender, about 5-10 minutes. Add garlic and cook 3-5 more minutes.

  2. 2. Stir in broth, mustard, vegetables and beans. Heat to boiling, stirring occasionally.

  3. 3. Stir together flour, baking powder, salt, cornmeal, and herbs (can use any herbs of your choice). Stir in oil, egg and milk just until dry ingredients are moistened (do not overmix).

  4. 4. Drop dough by tablespoonfuls onto boiling stew; reduce heat to low. Cook uncovered 10 minutes. Cover and cook 10 minutes longer.
