Excellent to use up left over vegies and can be modified to include any combination of vegetables like tomatoes, mushrooms, celery, etc. Great with whole weat pita or pita chips.

Recipe Ingredients for Vegetable Spread

4 tbsp olive oil
1 eggplant
1 onion
1 carrot
1 red pepper
2 zucchini
4 cloves garlic
1/4 cup parsley

Recipe Directions for Vegetable Spread

  1. Prepare eggplant. If the eggplant?s skin in tough, remove skin. Slice eggplant in rounds, salt on both sides and let it sit on the counter for 30 min. Rinse with water and squeeze out extra liquid from eggplant. Preheat deep skillet or Dutch oven.

  2. Brush a little olive oil on each side of eggplant or use cooking spray and grill the eggplant in the heated skillet about 5 min on each sides. Take out the eggplant and reserve.

  3. Heat remaining olive oil in the skillet. Meanwhile dice onion and add to the skillet. Dice carrot and add to skillet. Let it cook for 5 to 10 min. until softened.

  4. Continue cutting the remaining vegetables except for garlic and parsley and adding them to skillet. Add a little more olive oil if necessary.

  5. When all vegetables have been added to skillet, dice the reserved eggplant into small pieces and add it to the skillet as well. Stir, reduce heat to low, cover and let cook approximately 30 more minutes or until all vegetables are soft. Stir the contents every 10 minutes.

  6. When vegetables are done, turn off heat and add garlic through garlic press and chopped parsley. Season with salt and pepper.

  7. The dish can be eaten hot, but is better cooled.
