Sorry, the oil measurements were a bit out last time! Note I also add leeks, but these don't show up on the recipe analysis so I've left them off the ingredients

Recipe Ingredients for Vegetable Soup with Sweet Basil

1 large potato, diced
1 small onion, diced
2 stalks celery, diced
1 medium zucchini, diced
60 grams green beans, diced
2 medium carrots, diced
2 tablespoons olive oil
3 tablespoons water
3 cups stock
6 tomatoes, diced
4 cloves garlic
1 cup basil
1 tsp Salt
1/2 teaspoon black pepper
1 tsp Tabasco sauce

Recipe Directions for Vegetable Soup with Sweet Basil

  1. Cut the leeks, potato, onion, celery, zucchini, green beans, and carrots into 1/4 inch diced cubes.

  2. In a 6-quart stockpot, combine 1 tablespoon of the olive oil with the water. Add the vegetables and sauté over medium-low heat until all the water evaporates. Do not brown the vegetables.

  3. Add the stock and bring to a boil. Cook at a gentle boil for 30 minutes.

  4. Meanwhile, in a food processor fitted with the metal blade, put the tomatoes, basil, garlic, and remaining tablespoon of olive oil. Pulse until pureed.

  5. Stir the puree into the cooked soup. Do not let the soup return to a boil. Season, to taste, with salt, pepper, and a few dashes of Tabasco.
