Simple, hearty vegetable soup made from vegetables on hand. Changes based on what's handy. NOTE: Sodium may be less - I did rinse the beans.

Recipe Ingredients for Vegetable Soup - Slow Cooker

15 oz Kidney Beans
3/4 serving Extra Virgin Olive Oil
2/3 cup Frozen Onions
3/4 cup Frozen Bell Peppers
24 oz Low Sodium V8 100% Vegetable Juice
11 oz Beef Broth
8 medium Carrots, Baby
4 stalk, medium (7-1/2" - 8" long) Celery
7 oz Frozen Italian Or Romano Green Beans
7 oz The Silver Line Yellow
2 cups frozen spinach

Recipe Directions for Vegetable Soup - Slow Cooker

Sautee onions, peppers and celery (diced) in olive oil until they mellow and turn golden and start to soften. Put in crock pot with remaining ingredients EXCEPT spinach. Let cook for 4 - 6 hours on high, 8 hrs on low. Add Spinach last half hour or so (a little longer ahead if frozen).
