This is a spicy soup that's great year-round.

Recipe Ingredients for Vegetable Soup with a Roasted Red Pepper & Tomato Broth

3 ears corn
1 1/2 lbs yukon gold potatoes
3 cups diced zucchini
2 cups sliced carrots
1 cup diced onion
2 tsp olive oil
3 large tomatoes, roasted and peeled
1 large red bell pepper, roasted and peeled
1 jalapeno pepper, roasted and peeled
2 cups tomato sauce, unsalted
4 cups chicken broth
2 cups water
1 tsp salt
1 tsp pepper

Recipe Directions for Vegetable Soup with a Roasted Red Pepper & Tomato Broth

  1. Blend the roasted/peeled tomatoes, red pepper, and jalapeno in a blender with 2 cups of water until pureed. Cut each each of corn in half so you have six halves.

  2. Add olive oil to large stock pot and turn heat up to medium. Saute onions until soft. Add chicken broth, pureed mixture, and tomato sauce and bring liquid to a simmer.

  3. Add corn, potatoes, and carrots and let simmer until carrots are fork tender; about 25 minutes. Add zucchini and simmer another 10 minutes. Season with salt and pepper to taste.

  4. Serve bowls of soup with one piece of corn per person on the side. Chopped cilantro and crumbled cotija cheese may be used as garnish.
