This is a weight watchers soup with "no points value." Great with crusty french bread. I eat it when I'm still hungry but have neared my daily calorie limit. It's filling and very satisfying--plus, look at all those vitamins. You can't lose with this soup. Actually you WILL lose, weight, that is! Recipe Ingredients for Vegetable Soup

2 Garlic
1 medium Onions
2 medium Carrots
1 medium Peppers, Sweet, Red
1 Celery
2 small Squash, Summer, Zucchini, Includes Skin
2 cups Cabbage
2 cups Kale
2 cups Cauliflower
2 cups Broccoli
2 tsp Thyme, Dried
2 tbsp Parsley
1 tsp Salt, Table
1 tsp Pepper, Black

Recipe Directions for Vegetable Soup

  1. Put vegetables, thyme, and stock into pot. Cover and bring to a boil over high heat. Reduce heat to low and simmer 10 min or until desired tenderness. Turn off heat, add parsley, salt and pepper. Yields about 1 1/2 cups per serving
