Hearty soup with pasta, beans and veggies

Recipe Ingredients for Vegetable soup

1 onion
6 cloves garlic
4 large carrots
3 stalks celery
2 cups cabbage, sliced
14 oz. garbanzo beans
14 oz. pinto beans
14 oz. diced tomatoes
1 large tomato
2 tbsp. olive oil
4 cups vegetable broth
2 cups water
8 ounces pasta, cooked

Recipe Directions for Vegetable soup

Heat the olive oil and add diced onions and garlic. Chop the rest of the vegetables and add to pot; sautee for a few minutes. Add diced tomatoes (canned and fresh), vegetable broth and water and season to taste with basil, oregano and pepper. Bring to a boil and simmer for 20 to 30 minutes. Cook the pasta separately and drain. Add the pasta to the soup. Top with parmesan cheese if desired.
