Recipe Ingredients for Vegetable Soup

2 clove Garlic
2 medium (2-1/2" dia) Onions
2 medium Carrots
2 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
4 stalk, medium (7-1/2" - 8" long) Celery
2 medium Squash, Summer, Zucchini, Includes Skin
2 cup, chopped Cabbage
2 cup Bok Choy
2 cup Cauliflower
2 cup, chopped Broccoli
2 tsp Thyme, Fresh
8 cup Fat Free Vegetable Broth
2 tbsp Parsley
0.5 tsp Pepper, Black
1 tsp Salt, Table

Recipe Directions for Vegetable Soup

Put vegetables, thyme, and stock into a pot. Cover and bring to a boil. Reduce heat to low and simmer for 10 minutes, or until vegetables are tender. Turn off heat and add parsley, salt, and pepper. About 1.5 cups per serving
