A vegetable soup great for snack time or lunch

Recipe Ingredients for Vegetable Soup

3 Cube Chicken Stock Cubes
0.5 cup Leeks, (Bulb And Lower Leaf-portion)
1 cup, chopped Carrots
2 oz Wine
2 oz Wine
33 grams Tomato Paste

Recipe Directions for Vegetable Soup

  1. Make up the chicken stock to 1.5 litres. Chop up the carrots and leeks into small pieces.

  2. Add the wine to a pot and simmer the leeks for about 5 mins on a medium heat.

  3. Add the remaining vegetables cook for 5 mins, add the stock and the tomato puree and some bay leaves salt and pepper and simmer for 25 minutes. Add fresh parsley at the end.
