Recipe Ingredients for Vegetable Soup

2 medium leek
1 garlic clove
2 turnips
3 cups sliced parsnips (about 2 parsnips)
2 carrots
2 celery stalks
8 cups of water (or to cover vegetables)
2 cups chopped butternut squash
1 head, medium cabbage
28 oz crushed tomatoes
10 oz baby spinach
1 vegetable bouillon cube
1 teaspoon olive oil
1 cup cilantro
1 tsp ground black pepper
1 tsp table salt

Recipe Directions for Vegetable Soup

  1. Slice veggies

  2. heat oil in large stock pot

  3. add bouillon cube (crush with spoon before adding)

  4. add veggies

  5. then add water

  6. bring to boil

  7. cover and lower heat simmer for 30 min
