Take Skinny Soup and add canned artichoke hearts and canned mushrooms.

Recipe Ingredients for Vegetable Soup

6 cups beef broth
28 oz diced tomato (with juice)
2 tbs tomato paste
4 cups chopped cabbage
1 cup sliced carrots
14 oz canned green beans, drained
1 cup chopped zucchini
1 tsp basil
1 tsp oregano
14 oz canned artichoke hearts
4 oz canned sliced mushrooms, drained

Recipe Directions for Vegetable Soup

Saute carrots until soft. Mix all in pot, bring to boil, simmer for one hour.
