Made with store-bought roasted chicken and canned veggies

Recipe Ingredients for Vegetable Soup

16 oz chicken
24 oz diced tomatoes
12 oz Rotel tomatoes
24 oz green beans
20 oz corn
12 oz black eyed peas
2 cups carrots
2 cups brown rice
24 oz vegetable broth

Recipe Directions for Vegetable Soup

  1. Take chicken off the bone

  2. In a large pot, empty cans of tomatoes, and other veggies. Be sure to drain the peas and corn so as not to cloud the broth.

  3. Add chicken, broth and brown rice (I use already prepared) and bring to a boil.

  4. Cook for 20-30 minutes to meld flavors, and serve.
