Vegetable, leek, potato soup *I use low/no sodium/fat free broth so the numbers here are a bit off. It does not change the taste one bit, especially since you can add a little salt to taste. *This is a really versatile recipe; this version just happens to be what I had in my fridge this time...it will be (and always is) different next time. It's the method I like.

Recipe Ingredients for Vegetable soup

4 leeks, washed and sliced
4 small white potatoes, washed
5 carrots, peeled
4 medium onions, sliced thin
1 tbsp garlic minced
1 medium zuchinni, peeled and chopped
4 stalks celery, chopped
8 oz raw baby spinach
1 cup light sour cream
1/4 cup grated parmesan cheese
6 (12oz) cans chicken broth
2 tbsps dill
1/2 tbsp dried basil
1/2 tbsp dried oregano
1 salt and pepper to taste

Recipe Directions for Vegetable soup

  1. brown onions, leeks and garlic; add herbs and stir well

  2. add potatoes, carrots, zuchinni and celery

  3. cover with chicken broth

  4. cook for 45 minutes; puree

  5. cut spinach into thin strips and stir into soup

  6. serve; garnish with herbs, sour cream and/or parmesan cheese
