Makes 14 servings



Low fat, good protein, fiber and vitamins. Adjust seasoning to taste, add salt at the table to keep sodium in check. Makes a large amount for freezing. (NOTE: Used about 3 cups beans and 3 cups pasta, cooked. Not certain the uncooked amounts will yield same result)

Recipe Ingredients for Vegetable Soup

1 1/2 cups kidney beans, dried (or 2 cans Eden, no salt added)
1 1/2 cups macaroni, dried, shells
2 cups potatoes, cubed (1")
4 cups vegetable broth, low sodium, divided
28 oz. tomatoes, crushed, no salt added
1/2 cup onion, frozen (or fresh)
10 oz. mixed vegetables, frozen
14 oz. can tomatoes, no salt added (or fresh)
1 cup spinach, frozen
1 T basil
1 T oregano

Recipe Directions for Vegetable Soup

  1. Cook beans according to directions. Do not add salt.

  2. Cook pasta according to directions. Do not add salt.

  3. Boil potatoes for about 10-12 minutes until slightly soft.

  4. In large dutch oven or pot, add 2 cups of broth and rest of ingredients. (May brown onion in a little olive oil first for added flavor, then add rest).

  5. Simmer for an hour or so, add cooked beans and pasta and heat through. Add broth as necessary during cooking to make as thick/thin as desired.

  6. Adjust seasoning as desired. May use Italian Seasoning in lieu of basil/oregano.

  7. Serve with a swirl of olive oil and 1T. shredded Italian cheese.

  8. May cook down for smaller amount to freeze. Add water when preparing.
