A great way to eat your veggies! I don't know times, I just kind of winged it. If you like certain ingredients a little less soft, hold off from adding them for a few more minutes. Depends on if you like your vegetables soft or a little more firm. Also, feel free to add other seasonings...I do sometimes. Just depends on how I feel. Enjoy! (Makes about 9, 1-cup servings) P.S. I got the corn and chick peas from a can.

Recipe Ingredients for Vegetable Soup

8 cups low sodium vegetable broth
1 cup water
1 tomato
2 zucchini
5 small potatoes
1 cup carrots
1 cup corn
1 cup chick peas
2 cups cabbage
2 tablespoons salt

Recipe Directions for Vegetable Soup

  1. Shouldn't take more than an hour to prepare and cook.

  2. Add the broth to a large pot, on medium heat.

  3. Blend the tomato in the water and add to pot.

  4. Add salt.

  5. Cut potatoes and add to pot.

  6. Cut other ingredients.

  7. When the potatoes start to soften, add rest of ingredients except for cabbage.

  8. When everything is almost cooked, add cabbage.

  9. Let cook for about five minutes then remove from heat.
