Just a nice veggie soup that I use frequently for main courses for dinner and lunch to keep the calories down.

Recipe Ingredients for Vegetable Soup

2 zucchini
1 red bell pepper
4 medium potatoes
1 large red onion
2 tablespoons minced garlic
1 jalapeno pepper
3 cups carrots
8 oz beets
15 oz corn
1 Salt to taste
1 Pepper to taste
8 cups vegetable broth
6 cups water

Recipe Directions for Vegetable Soup

  1. Saute the onions and garlic with some cooking spray.

  2. Add the rest of the vegetables and stock and water and simmer for at least an hour to meld the flavors.
