Recipe Ingredients for Vegetable Soup

1 cups Chopped Yellow Onion
2 Celery Stalks
1/2 cup Chopped Carrots
1 cup Cabbage
2 tbsp. Olive Oil
2 Garlic Cloves
1 cup Zucchini
1 cup Sliced Mushrooms
4 cups Chicken Broth
1 oz. Tomato Juice
1 tbsp. Dried Parsley
2 cups Chopped Spinach
1 tsp. Salt
1/4 tsp. Ground Black Pepper
1 tbsp. Lemon Juice

Recipe Directions for Vegetable Soup

  1. Dice celery stalks, mince garlic. In 3-quart soup pot, saute onion, celery, carrots and cabbage in olive oil for 10 minutes, stirring often.

  2. Add garlic, zucchini with skin, and mushrooms and saute 10 more minutes, stirring often.

  3. Add chicken broth, tomato juice and parsley flakes. Bring to a boil. Cover and simmer for one hour.

  4. Add spinach, salt, pepper and lemon juice and simmer for another 15 minutes.

  5. Taste and adjust seasonings.
