Add one can of low sodium, fat free chicken or vegetable stock.

Recipe Ingredients for vegetable soup

2 tsp. olive oil
2 c. onions
2 c. celery
2 c. carrots
3 c. cabbage
2/3 c. dry french lentils

Recipe Directions for vegetable soup

  1. Chop all veggies up into bite size chunks. Saute the onion, celery and carrots in the olive oil til the onions get a little color.

  2. Add the rest of the vegetables and the stock. Add water to cover veggies and drop in the lentils.

  3. Cook for about 45 min or until the veggies are tender.

  4. Add some Old Bay, pepper , salt and a touch of cayenne as needed.
