Easy and nutritious vegetable soup. Nice and creamy, with no need for cream!

Recipe Ingredients for Vegetable soup

4 carrots, cooked
2 leeks, cooked
1 medium onion, diced and cooked
3 cloves garlic, minced and cooked
3 turnips, cooked
1 1/2 cups broccoli, cooked
3 small potatoes, cooked
1 tbsp olive oil
15 oz canned chick peas
6 cups water

Recipe Directions for Vegetable soup

  1. Sautee onions and garlic in olive oil

  2. Add can of chick peas, water, and then all the other vegetables

  3. Cook until turnips and potatoes are fork tender

  4. Puree all ingredients with hand held blender or food processor

  5. Add salt and pepper to taste, bay leaf optional for taste

  6. Soup should be smooth and creamy with no need for cream!
