NOTE: the broth is supposed to be fat-free, low-sodium vegetable stock, but this analyzer couldn't find it.

Recipe Ingredients for Vegetable Soup

1 green onion
2 medium carrots, grated
1 medium red pepper, chopped fine
1 celery stalk
1 cup corn
1 cup peas
1 cups broccoli
2 tsp thyme
8 cups low sodium vegetable broth
2 tbsp parsley
1/2 tsp pepper

Recipe Directions for Vegetable Soup

  1. Put vegetables, thyme, and stock into pot.

  2. Cover and bring to a boil over high heat.

  3. Reduce heat to low and simmer 10 min or until desired tenderness.

  4. Turn off heat, add parsley and pepper.

  5. Top with Parmesan cheese to taste (note: this will raise the fat & sodium values)

  6. Yields about 1 1/2 cups per serving.
